胰凝乳蛋白酶是一种丝氨酸蛋白酶，催化肽键水解，优先作用于芳香族氨基酸（酪氨酸、色氨酸、苯丙氨酸）的羧基端。它在胰腺中以无活性的酶原形式（胰凝乳蛋白酶原）合成，经胰蛋白酶激活。牛胰腺来源的该酶广泛应用于蛋白质测序、蛋白质组学和细胞培养领域。

Chymotrypsin is a serine protease that catalyzes the hydrolysis of peptide bonds, preferentially at the carboxyl side of aromatic amino acids (tyrosine, tryptophan, phenylalanine). It is synthesized in the pancreas as an inactive zymogen, chymotrypsinogen, which is activated by trypsin. The bovine pancreatic enzyme is widely used in protein sequencing, proteomics, and cell culture applications.
