Carboxypeptidase B is a zinc-containing exopeptidase that catalyzes the hydrolysis of the C-terminal peptide bond, preferentially releasing basic amino acids (arginine, lysine). It is synthesized in the pancreas as an inactive zymogen, procarboxypeptidase B, which is activated by trypsin. The porcine pancreatic enzyme is commonly used in protein sequencing and proteomics research.
